ABE Junmai Daiginjo (Modern) is the most refined sake from Abe Shuzo, polished to 45% and brewed with 100% Koshi Kagura rice cultivated in Niigata Prefecture. Crafted with Niigata’s signature ethyl caproate yeast, it offers sweet, fruity aromas reminiscent of melon and white peach. On the palate, it presents a clean, well-balanced sweetness, lifted by Abe Shuzo’s signature crisp acidity. This sake delivers a straightforward, modern Junmai Daiginjo profile that is both vibrant and approachable.
One of the brewery’s unique philosophies is to stop fermentation based on flavor, not alcohol percentage. As a result, slight variations in alcohol content may occur between batches, a testament to Abe’s dedication to flavor-first brewing. This is a limited-release sake that embodies Abe’s "Enjoy Fermentation" spirit.
