A unique creation that bridges tradition and innovation, ABE+ marks a bold evolution in Abe Shuzo's sake-making philosophy. This expression revives an innovative approach known as Hashira Shochu Shikomi, with historical roots dating back to the Edo period, but it is rarely practiced today due to its immense complexity. It involves introducing kasu-tori shochu, distilled directly from their own sake lees, into the brewing process. The addition of this custom shochu not only introduces profound flavor complexity but also improves shelf stability and beautifully accentuates the sake's natural fragrance.
