ABE + marks a bold evolution in Abe Shuzo's sake-making philosophy by introducing kasu-tori shochu, distilled from their own sake lees, into the brewing process. This innovative approach, known as Hashira Shochu Shikomi, has historical roots dating back to the Edo period, but is now rarely practiced due to its complexity.
The resulting sake blends the deep umami and richness of junmai sake with the clean, crisp finish of shochu. On the palate, it delivers a graceful balance of rice-driven body, subtle sweetness, and enhanced ginjo aromas, made more vivid by the presence of distilled spirit.
