Overview

AKABU Kohaku is a fall-limited Junmai Ginjo created as a new expression of autumn sake. Its name means “amber,” evoking the warm, luminous colors of the season. Brewed with Iwate-grown Gin Ginga and Ginga no Shizuku rice polished to 50%, together with Iwate Kobo yeast, it combines generous umami and rounded warmth with enough acidity to remain balanced and refreshing at just 13% ABV.

Founded in 1896, Akabu Shuzo rebuilt its brewery in Morioka after the 2011 Tohoku earthquake and tsunami. Led by sixth-generation brewer Ryunosuke Furudate and a young brewing team, AKABU continues to pursue a modern style rooted in Iwate’s ingredients and brewing culture. Kohaku reflects that philosophy through a seasonal sake designed to bring warmth, balance, and a sense of autumn to the table.
