This special release from Akagisan showcases the remarkable Enshinburi centrifuge system, a revolutionary technique that gently separates sake from the moromi using 3,000-rpm centrifugal force. Because the sake is extracted without applying pressure, it retains exceptional purity, similar to shizukuzake (drip-pressed sake), resulting in an expression that is remarkably smooth, delicate, and pristine. Made from Yamada Nishiki polished to 35%, it offers an elegant fragrance and a clean, ethereal palate marked by fine umami and a refined, seamless finish.
