Aramasa Amaneko (亜麻猫) is one of Aramasa’s most iconic Private Lab releases, celebrated for its bold acidity and distinctive character. Crafted using both traditional sake kōji and shōchū-style white kōji, it develops a sharply refreshing acidity uncommon in sake, balanced by delicate sweetness and a lively, clean finish. Aromas include green apple, grapefruit, and subtle oak notes from cedar vat aging, progressing into creamy pear, peach, and silky umami depth.
