This sake is typically drier and lighter than most Junmai Daiginjo, yet surprises with its depth. The aromas of tropical fruit are complemented by a beautiful silken texture, with notes of pink grapefruit and a characteristically dry finish of expressed citrus oils. Bijofu is brewed only once a year in small batches, showcasing the masterful craftsmanship behind every bottle.
