Born Gokuhizo Junmai Daiginjo
Tasting Notes
Born Gokuhizo was first produced in 1968 with a 40% rice polishing ratio, an incredible achievement given the rice polishing technology of the time. While breweries then were submitting competition-grade sake with a 50% polishing ratio, Born Gokuhizo stood out as the first commercially available Junmai Daiginjo in Japan. Today, with advancements in rice polishing, it is crafted with a 35% polishing ratio. This sake offers a splendid blend of fresh and dried fruits, florals, spices, and earthiness on the nose. The palate is smooth, round, and lush, with a broad structure and impactful layers of complexity, showcasing the signature qualities of Born sake.
