Dassai 23 Umeshu is a refined expression of plum sake, crafted with Dassai's world-renowned Junmai Daiginjo "Dassai 23" as its base. Instead of the typical green plums, it uses fully ripened Nanko plums from Wakayama, resulting in a richer, rounder flavor. This umeshu opens with notes of juicy plum and sweet cherry, layered with hints of honey, fig, raisin, and a delicate undertone of herbal ginseng and aged Madeira. Despite its natural sweetness, the elegant acidity and clean finish make it remarkably balanced and refreshing.
