Dassai Blue 23 Junmai Daiginjo

I've tried both Dassai 23 and Blue 23, to me I personally like Blue 23 better which feels fruiter and bolder, but still smooth enough to drink, like same soul but different personality comparing to Dassai 23.

Honestly, this is one of those sakes that just works. No over-the-top drama, just really good stuff. The aroma is fresh and clean—think ripe pear and a touch of floral sweetness—but not overpowering. When you take a sip, it’s smooth as hell and just enough umami to keep it interesting. The finish is crisp, with no weird aftertaste—just leaves you wanting another glass.

I’ve had the classic Dassai 23 before, but the Dassai Blue 23 Junmai Daiginjo takes things to another level. It’s incredibly refined, even smoother than the original, with a lighter, more delicate feel. The flavors are clean and pure, soft floral notes, a touch of melon, and just the right amount of sweetness. What really stands out is how effortlessly it glides on the palate, leaving a crisp, refreshing finish. Compared to the regular Dassai 23, the Blue 23 feels even more polished, almost weightless, yet still packed with depth.
