Dassai Blue 35 is an American-crafted Junmai Daiginjo that showcases Dassai’s dedication to domestic sake production. It’s made with Hudson Valley water and Arkansas-grown Yamada Nishiki rice, purpose-reactivated from seeds brought by Dassai. This sake opens with delicate aromas of white peach, ripe papaya, and nectarine, followed by soft floral and jasmine notes. On the palate, it delivers a gentle sweetness balanced by crisp acidity, a refined texture with a touch of spritz, and a whisper-soft finish with subtle minerality.
