Crafted at the Dassai Blue Brewery in New York’s Hudson Valley, this Junmai Daiginjo is made exclusively from Yamada Nishiki rice polished to 50%. Unlike most Daiginjo expressions that are designed primarily for chilled service, this release was intentionally developed to showcase depth and harmony when warmed.

Heating the sake enhances its roundness and amplifies subtle caramel and nutty nuances while maintaining the refined structure characteristic of Dassai Blue. It offers a modern interpretation of “hot sake,” demonstrating that premium Junmai Daiginjo can evolve beautifully with temperature.
