Tasting Notes

Dassai Composing the Future is light, dry, smooth, and exceptionally refined. During fermentation, the sake was exposed for approximately one month to Johann Strauss II’s “Lagoon Waltz,” with vibrations transmitted through the tank to subtly influence yeast activity and the final texture. The result is a poised Junmai Daiginjo with a polished, seamless mouthfeel and a clean, elegant finish. Best enjoyed chilled in a wine glass. Its delicate profile is well suited to sashimi, white fish, shellfish, and lightly seasoned dishes.

Overview

Dassai Composing the Future was created as an Austria–Japan collaboration for Expo 2025 Osaka–Kansai. The project began after Harald Mahrer, President of the Austrian Federal Economic Chamber, proposed a special DASSAI as a symbol of friendship between the two countries. Philharmonic Taste, a sextet of Vienna Philharmonic members, and the Japan Century Symphony Orchestra performed Johann Strauss II’s “Lagoon Waltz,” with the two recordings combined in Austria. During fermentation, a sonic device vibrated the tanks continuously for 30–35 days, helping dissolved gas escape and subtly influencing yeast activity. Polished to 23%, the same ratio as Dassai 23, this release is defined by its music-driven fermentation; its label features the score alongside the logos of both orchestras.
