Tasting Notes

An elegant and collaborative expression crafted under Niizawa’s leadership, showcasing the precision and purity that define the Date Seven project. This Junmai Daiginjo opens with refined aromas of melon, white grapes, and soft florals shaped by Niizawa’s in-house yeast. As it aerates, delicate sweetness and subtle minerality begin to emerge. On the palate, it offers a light, polished, and quietly expressive texture, rounding into a fleeting, crystalline finish that reflects the soft well water of Miyagi and the mountain-inspired concept behind the label.

About Date Seven

Date Seven is a collaborative project created by seven of Miyagi Prefecture’s leading breweries: Niizawa Jozoten(新澤醸造店), Katsuyama Brewery(勝山酒造), Urakasumi Sake Brewery(株式会社 佐浦/浦霞), Yamawa Shuzo(山和酒造店), Hitakami – Hirako Shuzo(日高見/平孝酒造), Suminoe Shuzo(墨廼江/株式会社 角星), and Abekan Brewery(阿部勘酒造店). Each year, one brewery takes the lead to craft a new expression that blends shared techniques with the individuality of the producer. Overview

Best enjoyed well-chilled to highlight its clean aromatics and graceful delicacy. The interplay of gentle fruit and refined minerality makes this sake an ideal partner for light, elegant dishes. Exceptional alongside fluke sashimi, chilled crab, and lightly seasoned tempura, where the sake’s subtle finish complements freshness without overpowering the food’s natural sweetness.
