The grapes are meticulously hand-harvested at midnight, ensuring they are picked at their absolute coolest temperature to lock in crisp acidity and pure fruit expression. The wine is then fermented and aged for 12 months in small French oak barrels, utilizing a state-of-the-art gravity-flow system to preserve its delicate nuances.
