Tasting Notes

A collaboration between Tatenokawa Brewery in Yamagata and the legendary rock band Foo Fighters, Hansho Ao (“Midnight Blue”) draws inspiration from the band’s “Pop” side and their 10th album Medicine at Midnight. This Junmai Daiginjo is crafted using the brewery’s premium Dewasansan rice polished to 50%, and uniquely fermented while Foo Fighters’ songs played in the background, an homage to the connection between music and sake-making. The result is a sake with a gentle mouthfeel, delicate sweetness, and a balanced finish that awakens the palate and leaves you craving another sip. Aromas are subtle yet inviting, complementing its smooth texture and refined profile.

A rare music-inspired sake from Tatenokawa Brewery and Foo Fighters, smooth, lightly sweet, and perfectly balanced. Crafted with Dewasansan rice and fermented to the beat of the band’s own songs, it’s a unique celebration of artistry in both sound and flavor.
