“Crystal Flower” (六花) is a winter-only special release from Shindo Sake Brewery in Yamagata, bottled in a pure and unfiltered style to highlight clarity and seasonal freshness. Made exclusively with Dewanosato, a sake rice developed in Yamagata, it opens with a refined, gently aromatic profile marked by delicate florals and soft mineral tones. On the palate, it is clean, precise, and quietly expressive, offering subtle sweetness balanced by bright acidity and a finely etched texture. Light in body yet articulate in structure, the finish is crisp, graceful, and elegantly lingering.
