Crafted from Grade A Yamada Nishiki rice from Tojo, Hyogo, one of the most prestigious sake rice-growing regions in Japan, Gikyo 'Chivalry' Junmai Ginjo is an outstanding expression of balance and depth. Yamachu Honke Brewery is one of just 12 breweries granted access to this highly sought-after rice, allowing them to create a sake that truly embodies the elegance and complexity of premium Yamada Nishiki.
The sake opens with lush melon aromas, leading into layers of savory cereal grains and toasted wheat. The finish is crisp and dry, with a subtle tingle of spice, adding a sophisticated dimension to the experience. Unlike many sakes, the toji (brewmaster) has chosen to skip the standard water dilution process, ensuring that the sake retains the full impact and power of its original brew.
