Yamachu Honke Brewery is one of just 12 breweries granted access to this highly sought-after rice, allowing them to create a sake that truly embodies the elegance and complexity of premium Yamada Nishiki.
The sake opens with lush melon aromas, leading into layers of savory cereal grains and toasted wheat. Unlike many sakes, the toji (brewmaster) has chosen to skip the standard water dilution process, ensuring that the sake retains the full impact and power of its original brew.
