Tasting Notes
Haccoba Kasu Sansho Lemonade is a wonderfully creative expression of Japan’s emerging craft sake movement. Produced by haccoba Brewery in Fukushima, this brew utilizes lees (kasu) from TANIGAKI’s signature sansho lemonade, a blend of yuzu-inspired citrus and Asakura sansho pepper. Fermenting these lees with Fukushima-grown rice and green cardamom yields a sake with bright yet mellow lemon-pepper aromas, a refreshing tartness, herbal nuance, and a subtle backbone of umami. Light, aromatic, and endlessly quaffable whether served cold or over ice.
Overview
Best enjoyed chilled or over ice, especially during warmer weather. Its vibrant citrus‑herb complexity makes it an ideal partner for light appetizers, vegetable dishes, or fusion cocktails, effortlessly elevating modern pairings.
