Produced by haccoba Brewery in Fukushima, this brew utilizes lees (kasu) from TANIGAKI’s signature sansho lemonade, a blend of yuzu-inspired citrus and Asakura sansho pepper. Fermenting these lees with Fukushima-grown rice and green cardamom yields a sake with bright yet mellow lemon-pepper aromas, a refreshing tartness, herbal nuance, and a subtle backbone of umami. Light, aromatic, and endlessly quaffable whether served cold or over ice.
