Tasting Notes

Hakurakusei Omachi The Connoisseur opens with soft aromas of pineapple and white peach. The palate is clean and bright, with Omachi rice adding depth, density, and gentle savory weight to Hakurakusei’s normally restrained style. Vivid acidity keeps the structure crystalline and drives a crisp, refreshing finish. Best served chilled, it pairs especially well with rich dishes such as chicken adobo, bo ssam, and whole roasted mackerel.

Overview

Hakurakusei Omachi The Connoisseur is a seasonal Junmai Ginjo genshu brewed with Omachi rice polished to 50%. Omachi’s natural power brings extra depth and concentration to the brewery’s characteristically clean style, while bright fruit and precise acidity preserve the clarity that defines Hakurakusei. It is the only undiluted sake in the Hakurakusei series and is released in limited quantities once each year.

Founded in 1873 in Miyagi Prefecture, Niizawa Sake Brewery introduced Hakurakusei in 2002 as the “ultimate food sake.” Its restrained aromatics, low residual sugar, and crisp finishes are designed to support a meal rather than overpower it. The brewery combines flat-polishing technology with strict refrigerated storage to preserve freshness and precision.
