Tasting Notes

Hakurakusei Yashiro Celestial opens with restrained aromas of passion fruit and pineapple, followed by a fresh, lightly textured palate that highlights the purity of Yamadanishiki. Bright citrus notes shape a clean, crisp finish, while gentle umami keeps the sake precise and food-friendly. Best served chilled, it pairs especially well with seafood, shirako, oysters, and insalata di mare.

Overview

Hakurakusei Yashiro Celestial is a Junmai Daiginjo brewed with exceptional Yamadanishiki from Shimokume in Yashiro, Hyogo Prefecture. Polished to 29%, the rice is expressed through restrained aromatics, transparent flavor, and a clean citrus finish that reflects Hakurakusei’s approach to the “ultimate food sake.”

Founded in 1873 in Miyagi Prefecture, Niizawa Sake Brewery introduced Hakurakusei in 2002 with the aim of creating sake that supports a meal rather than overpowering it. The brewery combines precise flat-polishing technology with strict refrigerated storage to preserve clarity, freshness, and balance.
