Hitakami Nakadori Hyotan Daiginjo Blue
Tasting Notes
Round on the nose with aromas of concord grape, honeysuckle, sweet steamed rice, and ripe Asian pear. Exceptionally well-balanced on the palate, this sake envelops the mouth with a touch of weight, gentle sweetness, and reserved acidity. Less than 2,000 bottles are produced annually. It is aged in-bottle, undiluted, and made exclusively from the nakadori (middle) portion of the sake pressing process, known for its delicate and elegant taste. The Yamada Nishiki rice used is Toku-A grade, the highest available, sourced from the renowned fields of Yoshikawa.
