Tasting Notes

Floral yet reserved on the nose, this sake evokes aromas of honeysuckle, sweet banana, rice cake, and a hint of white pepper. Elegant and smooth, it offers a touch of sweetness that transitions into a deftly dry finish. Medium-light in weight with light acidity and a long finish, this sake is gentle and clean, making it an excellent match for the delicate flavors found in Japanese cuisine. Aged in-bottle and completely undiluted, this sake is crafted from Yamada Nishiki—the highest grade available of Hyogo's rice harvests—grown in the renowned fields of the Toujo District. Production is highly limited, with less than 1,700 bottles made annually.

Overview

Food Pairings: Enjoy on its own or with super-light dishes such as raw fluke, tilefish, bass, crudité, cucumber, chilled crab, or raw oysters. Pairs beautifully with the umami of dashi. Lightly dressed salads, such as young arugula with lemon, olive oil, and a touch of pecorino, also complement this sake.

Bold and vibrant with full character, this one bursts with rich flavor and a lively kick. The aroma is inviting and the full bodied taste lingers beautifully. It is the kind of sake that makes you slow down, savor, and truly enjoy the moment. Btw I really like the bottle design.
