Brewed by Kobayashi Shuzo in Tochigi Prefecture, the acclaimed "Phoenix Series" is a testament to the brewery's absolute mastery of Aiyama rice. For decades, the brewery president has cultivated deep relationships with contract farmers in Hyogo to source this incredibly rare "Diamond" of sake rice. Today, Houou Biden is recognized as the second-largest user of Aiyama in the entire industry, following only the legendary Juyondai. "White Phoenix" is polished down to an exquisite 45% and bottled as a Nama Genshu to capture the pure, unadulterated essence of the brew in every drop.
