Hououbiden Sake Mirai is a refined Junmai Ginjo crafted with the rare and expressive rice variety, Sake Mirai. Developed in 1991 by Takagi Shuzo, the famed brewery behind Juyondai, Sake Mirai is a cross between Yamasake No. 4 and Miyama Nishiki. It stands out for its purity, clarity, and depth, offering fewer off-flavors (zatsumi) than its parent varieties.

To highlight the rice's potential, Hououbiden employs the traditional Kimoto method and allows the sake to mature for approximately six months, far longer than their typical aging period. The result is a sake that opens with fresh, green aromas, a light and refreshing texture, and a creamy, elegant finish. As it matures, it gains even more depth and harmony, making it both dynamic and age-worthy.
