IWA 5 is a revolutionary sake created by Richard Geoffroy, the legendary former Chef de Cave of Dom Pérignon. Brewed in Toyama Prefecture at the Shiraiwa brewery, IWA 5 abandons the traditional single-brew approach in favor of "Assemblage" (master blending). By meticulously weaving together different rice varieties and yeast strains, Geoffroy crafts a sake of unprecedented complexity.
