Tasting Notes

Intensity is the salient character of Assemblage 3, giving an edge to a remarkably racy and mouthwatering conclusion. On the nose, the first notes are bright and intriguingly vegetal, more floral than fruity, featuring cucumber, green mango, and white flowers. As it breathes, it grows more complex through darker lower tones like toasted rice, smoke, and cacao. On the palate, all these diverse sensations seamlessly converge, drawn to a tactile, intense, and deeply satisfying finish.

Overview

IWA 5 is a revolutionary sake created by Richard Geoffroy, the legendary former Chef de Cave of Dom Pérignon. Brewed in Toyama Prefecture at the Shiraiwa brewery, IWA 5 abandons the traditional single-brew approach in favor of "Assemblage" (master blending). By meticulously weaving together different rice varieties and yeast strains, Geoffroy crafts a sake of unprecedented complexity. Assemblage 3 (released in 2021) represents a bold shift towards intensity, utilizing darker, woodsy aromas and a mouthwatering structure that challenges the boundaries of traditional sake.
