On the nose, the first notes are bright and intriguingly vegetal, more floral than fruity, featuring cucumber, green mango, and white flowers. Overview

IWA 5 is a revolutionary sake created by Richard Geoffroy, the legendary former Chef de Cave of Dom Pérignon. Brewed in Toyama Prefecture at the Shiraiwa brewery, IWA 5 abandons the traditional single-brew approach in favor of "Assemblage" (master blending). By meticulously weaving together different rice varieties and yeast strains, Geoffroy crafts a sake of unprecedented complexity. Assemblage 3 (released in 2021) represents a bold shift towards intensity, utilizing darker, woodsy aromas and a mouthwatering structure that challenges the boundaries of traditional sake.
