Assemblage 4 (2022) continues that approach with a carefully orchestrated build: multiple rice varieties and yeast strains are used to create contrasting layers, then brought together through blending to form a cohesive whole.

This release is Junmai Daiginjo with no added alcohol, and the entire production is pasteurized, making it stable yet still highly aromatic and dynamic. It is also designed to be explored across temperatures: chilled for clarity and lift, room temperature for depth and breadth, or gently warmed for a rounder, more savory expression.
