Assemblage 5 is an unprecedented and somewhat avant-garde proposition from IWA, defined by the interplay of warmth, gravitas, and tonicity. It offers an incredibly engaging contrast between the palate and the nose. The aroma presents a palpable duality of pure, well-rounded floral and fruity notes, including pear, plum, raspberry, and jasmine. However, the palate introduces an archaic tactile presence defined by a gentle astringency, accented by layers of pineapple, licorice, and almond.

IWA 5 is a revolutionary sake created by Richard Geoffroy, the legendary former Chef de Cave of Dom Pérignon. Brewed in Toyama Prefecture at the Shiraiwa brewery, IWA 5 abandons the traditional single-brew approach in favor of "Assemblage" (master blending). By meticulously weaving together different rice varieties and yeast strains, Geoffroy crafts a sake of unprecedented complexity. Assemblage 5 (released in 2023) is a testament to Geoffroy’s mastery, introducing a brilliant textural contrast that balances rich, rounded fruitiness with a sophisticated, tonic grip.
