This commemorative brew from Takagi Shuzō (Juyondai) celebrates the 400th anniversary of the brewery. The name "Hakuun Kyorai", “Flowing Spring, Passing White Clouds”, derives from the Zen phrase “青山元不動,白雲自去來,” invoking poetic serenity and subtle movement.
Crafted using premium 80% Aiyama and 20% Yamada Nishiki from Hyōgo's Special A zone, both polished to 35%, the sake features an elegant aroma dominated by honeydew melon, layered with hints of pear, green apple, and floral sweetness. On the palate it is silky, layered, and precise, balancing gentle sweetness with a refined acidity before a long, crystalline finish, traits aligning with Juyondai's top-tier prestige.
