Brewed by Takagi Shuzō in Yamagata, this high-tier release is made from the brewery-developed rice Sake Mirai, polished to an ultra-refined 35%. The nose is pure and lifted with notes of honeydew, ripe pear, Fuji apple, and a hint of banana candy. On the palate it’s silky and concentrated yet remarkably clean, balancing gentle sweetness with poised acidity before a long, elegant finish. “Daigokujō” signals an especially select, pristine expression within the Juyondai range.
