Katsuyama Den Junmai Daiginjo is a rich, polished sake with a graceful fruity aroma and remarkable depth. Brewed by Katsuyama Shuzo in Sendai, Miyagi Prefecture, Den is a modern expression of traditional Junmai Daiginjo craftsmanship. Only one tank is brewed each week, allowing meticulous attention to every stage. Special A Yamada Nishiki from Hyogo Prefecture is polished to 35% and gently fukuro-pressed to preserve its purity, rich natural sweetness, and layered umami. The name Den carries the meanings of both tradition and conveying thoughts or feelings, reflecting a sake designed to bring depth and connection to the dining table.
