"KOMYO" translates to "Ray of Light," symbolizing a bright new frontier for the sake industry's future. Crafted by Tatenokawa, a prestigious Yamagata brewery dedicated exclusively to brewing Junmai Daiginjo, this masterpiece represents the absolute summit of human brewing capability.

In 2018, the brewery set out to achieve the impossible: polishing the "King of Sake Rice" (Hyogo-grown Yamada Nishiki) down to an unprecedented 1%. This extreme polishing process requires approximately 1,800 hours (75 days) of continuous, closely monitored milling to ensure the rice grains do not crack from friction. The result, released in 2019, is KOMYO Yamada Nishiki. It is not merely a beverage but a historic testament to extreme craftsmanship, offering a flawless, diamond-like purity that no other brewery has ever achieved.
