Tasting Notes

Kuheiji Betsu Atsurae is a Junmai Daiginjo crafted from Yamada Nishiki rice polished to 35%. Betsu Atsurae means “tailor-made,” reflecting a sake designed with the precision of a bespoke suit. The 2025 Brew Year marking follows Kuheiji’s vintage convention, which records the rice harvest year rather than the bottling or release year.

Aromas of ripe pear and melon unfold with notes of apple peel and subtle white pepper. On the palate, elegant umami and refined acidity create a silky, layered structure, followed by delicate bitterness and a long, composed finish. Serve chilled at approximately 10 to 12°C in a wine glass. Pair with lobster, scallops, uni, caviar, bouillabaisse, grilled fish, or creamy dishes.

Overview

Betsu Atsurae means “tailor-made.” Crafted from Yamada Nishiki polished to 35%, it shows how deep polishing can preserve rice umami while sharpening freshness, acidity, and aromatic complexity. Rather than pursuing simple lightness, this expression combines clarity with a rich, layered texture. The 2025 Brew Year marking follows Kuheiji’s vintage convention, which records the rice harvest year rather than the bottling or release year.

Brewing philosophy

Kuheiji places rice cultivation at the beginning of its brewing story. Its work in the rice fields of Kurodasho, alongside its separate wine project in Burgundy, reflects a sustained interest in how agriculture and place shape a drink.
