Matsunotsukasa Cuvée Mosaic is a bold and imaginative blend that breaks convention and embraces complexity. Crafted by Matsunotsukasa Shuzo in Shiga Prefecture, this sake is composed of eight different components, including various rice varieties (Yamadanishiki, Ginfubuki), multiple polishing ratios (55%, 60%), and even different harvest years. The result is a sake with remarkable depth and structure, simultaneously modern and rooted in tradition.
The base is built from 50% Junmai Ginjo Arabashiri (2020), supported by 35% aged sake and 15% Junmai Daiginjo Omachi (2021). This multilayered composition produces a sake that is harmonious and textured, with a nuanced interplay of umami, soft acidity (1.4), and earthy tones. Despite its complexity, the sake maintains a balanced profile with an SMV of ±0, and the final touch of limestone water from Mount Ibuki adds a unique minerality and softens the finish.
