Tasting Notes
A sake steeped in history, Nishide "100 Year" Junmai Daiginjo is a tribute to tradition, craftsmanship, and the natural elements of Ishikawa. This exquisite sake is made exclusively with Gohyakumangoku rice, polished to 50%, and brewed using Kuratsuki Kobo, a rare yeast discovered 100 years ago that exists only within the Nishide brewery.
Delicate yet complex, this sake opens with soft and mild notes of apricot and young banana, followed by the smooth umami of sake rice. The finish is dry and well-balanced with acidity, making it an elegant and refined choice for any occasion. Adding to its artistry, the bottle is adorned with 17th-century Kutani Yaki porcelain artwork, celebrating Ishikawa’s rich cultural heritage.
