Overview

Founded in Ishikawa in 2017, the Noguchi Naohiko Sake Institute was established to preserve and pass on the knowledge of master brewer Naohiko Noguchi, widely known as the “God of Sake Brewing.” With a career spanning more than seven decades, Noguchi continues to share his techniques, philosophy, and vision with the next generation of brewers working alongside him.

This Junmai Daiginjo is made from Yamada Nishiki rice polished to 50%, then presented as muroka nama genshu, unfiltered, unpasteurized, and undiluted. The style preserves its vivid fruit character, fresh acidity, soft umami, and full natural strength. Keep refrigerated and serve slightly chilled.
