Tasting Notes

Ohmine 2Grain Yamadanishiki is crafted through a carefully controlled brewing process to achieve an ideal taste. The brewing method involves reducing the bacteria responsible for unwanted flavors and increasing the bacteria needed for alcohol fermentation, resulting in a distinctive and refined sake. This brew boasts a juicy taste reminiscent of pear and white peaches. Notes of sugarcane and roasted almond are present in the middle, followed by a subtle bitterness reminiscent of cacao and orange peel on the finish.
