Ohmine 3 Grain Aiyama opens with vivid aromas of fresh lychee, tropical fruit, and ripe melon. On the palate, Aiyama rice brings generous fruit richness and mellow sweetness, shaped by rounded acidity and Ohmine’s signature mineral-driven structure. The fruit and minerality remain beautifully layered through a slightly long, refreshing finish. Best enjoyed well chilled in a wine glass. Brewed by Ohmine Shuzou in Mine City, Yamaguchi Prefecture, Ohmine 3 Grain Aiyama is a limited-release Junmai Genshu made entirely from Aiyama rice polished to 50%. Ohmine resumed brewing in 2010 after a 50-year hiatus, combining the natural resources of Mine with a modern, research-driven approach to sake. For this release, Aiyama’s generous fruit character is shaped into a refined balance of mellow sweetness, rounded acidity, and layered minerality. The brewery intentionally leaves the yeast, SMV, and acidity undisclosed so the sake can be experienced without technical preconceptions.
