Tasting Notes

Aromas of white citrus blossom open to muscat, melon, and banana. The palate is fresh and gently sweet, with clean acidity and vibrant minerality that keep the finish crisp and structured. Best served chilled around 41°F, though it can also be enjoyed near 68°F. Pair with oysters, scallop crudo, white fish sashimi with citrus, or lightly salted tempura.

Overview

Made with 100% Saito no Shizuku, a sake rice developed in Yamaguchi, this limited 3 Grain release focuses on clarity, balance, and precise mineral structure. The rice is polished to 50%, and Ohmine uses a proprietary brewing approach designed to retain umami components that can be lost during alcoholic fermentation. Presented as a Junmai Genshu at 14% ABV for the U.S. release, it balances gentle sweetness, savory depth, and clean acidity without heaviness. Ohmine intentionally does not disclose the yeast, SMV, or acidity to encourage tasting without technical preconceptions.
