Overview

As a prestigious release within Senkin Shuzo's Kakumei ("Crane's Call") series, the Urara represents the pinnacle of their "Edo Return" brewing philosophy in Tochigi Prefecture. This special bottling masterfully revives Genroku-era brewing techniques from the Edo period for the modern palate. By employing a traditional high-koji method, utilizing a significantly larger proportion of koji than standard practices, alongside a specialized high-sugar fermentation, the brewers have coaxed the utmost umami and sweetness from the premium Kame no O and Yamada Nishiki rice. This rich, historical expression pairs wonderfully with a variety of gourmet dishes, making it a sublime companion for peach caprese, prosciutto and melon, kombu-cured sea bream, and grilled chicken with shio koji.
