The Modern series from Senkin Brewery (Tochigi Prefecture) represents a new revival, now entirely brewed with the traditional kimoto method. Using pure subterranean water from the Kinu River, this sake is crafted with no additives, showcasing a natural fermentation character. Aromas recall La France pears, melon, muscat, and lychee, layered with a subtle Sauvignon Blanc-like note attributed to the aromatic compound 4MMP. The palate is soft, lightly textured, and delicate, finishing clean without excessive alcohol weight.
