Shichiken Hakushin, crafted by Yamanashi Meijo in the pristine landscape of Hakushu, captures the essence of its environment, the purity of a single grain and a drop of spring water. Brewed with locally grown Yumesansui rice, polished down to an ultra-refined 27%, this sake develops a delicate and refined expression. Aromas evoke mountain snow meltwater, soft fruit tones, and a nostalgic floral hint. The palate is mellow yet vibrant, with clean umami and slow-unfolding depth, reflecting both nature’s tranquility and the brewery’s meticulous tradition.
