Shichiken Mori no Kanade Sparkling offers fine, elegant bubbles with a medium-dry profile and lively acidity. Aromas of lemon, maple syrup, vanilla, macadamia nut, ricotta, and apple pie unfold over a cool, clean palate, while mellow whisky-barrel notes add texture and depth without overwhelming the sake’s freshness. The finish is crisp, softly spiced, and remarkably refined. Serve well chilled. Pair with seared tuna and yuzu kosho, roasted lamb with tarragon sauce, creamy cheeses, or dark chocolate.

Overview

Founded in 1750, Yamanashi Meijo has brewed Shichiken in Hakushu, Yamanashi, at the foot of Mt. Kaikoma, an area renowned for exceptionally pure water. The brewery’s philosophy centers on sake that embodies the local Hakushu water, combining nearly three centuries of craftsmanship with a refined ginjo-style approach and a pioneering sparkling sake program.

Mori no Kanade, meaning “Melody of the Forest,” brings together two neighbors in Hakushu: Shichiken and the Suntory Hakushu Distillery. Bottle secondary fermentation creates its fine, graceful bubbles, while maturation in mellow Hakushu whisky barrels contributes notes of maple, vanilla, nuts, and gentle spice. The result is a distinctive sparkling sake that balances forest-like freshness with layered barrel complexity.
