This specific release is exceptionally rare, as it is brewed using Grade A "Aiyama" rice sourced from Yokowa. Often referred to as the "Diamond" of sake rice, Aiyama is incredibly difficult to cultivate and highly sought after by master brewers, usually reserved exclusively for their most prestigious and limited releases. Combined with local Kanazawa #1401 yeast, this sake achieves a profound depth, full body, and brilliant acidity that truly honors its rare ingredients.
