Tasting Notes

Suigei Mann Junmai Daiginjo opens with gentle aromas of banana and other ripe fruit layered with a refined rice fragrance. The palate shows the depth and fullness of Yamada Nishiki from Hyogo’s Special A district, balanced by a dry profile, subtle sweetness, savory umami, and Suigei’s signature bright acidity. Elegant and composed through a crisp, sophisticated finish, it is best enjoyed well chilled. Pair with lightly seasoned steak, teppanyaki, sashimi, steamed seafood, tempura, and delicate high-end sushi.

Overview

Founded in 1872 in Kochi Prefecture, Suigei Brewery builds its sake around the food culture of Tosa. Its guiding idea is shokuchu-shu—sake designed to accompany a meal—with restrained fragrance, firm structure, bright acidity, and a crisp finish that brings out the character of the dish.

Mann is the flagship Junmai Daiginjo of the SUIGEI HIGH END COLLECTION. It is brewed with Yamada Nishiki from Hyogo’s prestigious Special A district, polished to 30%, and fermented slowly at low temperature with Suigei’s traditional proprietary yeast. The result brings together a rich yet gentle aroma, rounded depth, precise acidity, and a clean finish—an elevated expression of Suigei’s food-focused brewing philosophy.
