Founded in 2020 in Shimonoseki, Yamaguchi, Tenbi is known for its modern brewing environment, featuring stainless steel equipment, precise temperature control, and a fully enclosed production space. Kara-Ten reflects the brewery’s philosophy that “a tiny difference makes a big difference,” with meticulous attention paid to fermentation control and microbiology. Rather than relying on rice variety or sake meter value, Kara-Ten achieves its dryness by carefully lowering glucose levels to around 1.6 through the adjustment of two koji molds, combined with the use of yeast #701. Best enjoyed well chilled, it pairs effortlessly with a wide range of dishes and is designed to elevate everyday dining.
